During our recent cooking class, we recognized Prostate Awareness Month and discussed the benefits of including fruit in your diet in order to maintain your health, nutrition and fight inflammation in your body.

We incorporated fruit into our meal by creating a delicious watermelon soup with chili and lime! Watermelon is a great source of lycopene, which is especially helpful for prostate health as it may inhibit prostate cancer growth.

Ingredients

  • 4 cups seeded watermelon chunks
  • 2 tablespoons extra-virgin olive oil
  • 1 small jalapeño pepper, seeded and chopped
  • 1 teaspoon honey
  • 1 teaspoon lime zest
  • 3 tablespoons freshly squeezed lime juice
  • 1 teaspoon sea salt
  • 10 ice cubes
  • 1 tablespoon chopped fresh mint
  • 6 sprigs fresh mint, for garnish

Directions
Put the watermelon, olive oil, jalapeño, honey, lime zest, lime juice, salt, and ice cubes in a blender and process until smooth. Add the chopped mint and blend just until combined. Serve in glasses, garnished with the mint sprigs. This soup tastes best the day it was made.

The ice cubes will chill the soup, so it can be eaten immediately. However, if you want it super chilled, cover and refrigerate for 1 hour before serving.
